octopus salad

octopus and green field salad, wild mushroom, Parmesan cheese flakes and lime dressing
 lamelle di polipo con ovoli di cornappo e scaglie di parmigiano, vinaigreete al lime

INGREDIENTS : octopus, wild mushrooms, Parmesan cheese, mixed lettuce, onion, carrot, celery, garlic, cloves, extra virgin olive oil, lime, whit wine , wine bottle corks.

METHOD : Poach the octopus in cold water and white wine, with onion, carrot, celery, garlic cloves corks and let boil.
Let the octopus cool down a little bit in his own water, trim it from the red skin immediately, cut in to few pieces and tight it up in a plastic container or clean film ( if available use the professional cylinder and press inside it the chunks of octopus ) shape it as a salami loaf.
Let the octopus "loaf" cool down and freeze it.
Prepare the lime dressing.
Dish out according the photo ,: shave the frozen octopus loaf on the mixed lettuce dressed with lemon dressing , add Parmesan cheese flakes, and shaved wild mushrooms ( possibly mushrooms sup only ) If fresh wold mushrooms not available, to substitute with regular fresh white bottom sup mushrooms.
Dish out according to the photo, pouring last minute the lemon dressing.

 green sauce ကို ပိုစ္႕တခုအေနန႕ဲ တင္ပါအံုးမယ္။ အေပၚဆံုးက ဟင္းပြဲက အီတလီ chef အသစ္ ထုတ္တာပါ။ သူ႕ octopus က အေအးပါ။ ေအာက္ကဟင္းပြဲက အေဟာင္းပါ။ octopus အသုပ္အမ်ဳိးအစားၿခင္းတူလို႕ ေပါင္းတင္လိုက္ပါတယ္။  ေအာက္ပံုက ေအာ္တုိပက္စ္က ပူပူေလးပါ။ စိတ္ၾကိဳက္ေရြးၿပီး စိတ္ၾကိဳက္သာ သံုးေဆာင္သြားၾကပါ။
