The head chef
In large establishments: the duties of the chef di cuisine. head chef of person in charge are mainly administrative; only in small establishments would it be necessary for the chef to be engaged in handling the food his function is :
  • to organize the kitchen,
  • to complie the menus,
  • to order the foodstuffs,
  • to show the required profit,
  • to tngage the staff,
  • to supervise the kitchen particulary at service time,
  • to advise on purchase of equipmint,
and in many cases to be responsible wholly or partially for the store, still room and washing up of silver, crockery etc.
