clear soup or consomme



  • 200 g chopped or minced beef
  • 1 liter cold ,white or brown beef stock
  • Bouquet garni
  • 100 g mixed vegetables ( onions,carrot,celery,leek)
  • 1 egg white
  • salt
  1. Thoroughly mix the beef, salt , egg white and 1/4 liter (1/2pt) cold stock in a thick bottomed pan.
  2. Peel, wash and finely chop the vegetables.
  3. Add to the beef with the remainder of the stock the bouquet garni and the peppercorns.
  4. Place over a gentle heat and bring slowly to the boil stirring occasionally.
  5. Allow to boil rapidly for 5 - 10 sec.
  6. Give a final stir.
  7. Lower the heat so that the consomme is simmering very gently.
  8. Cook for 1.30 or 2 hr without stirring.
  9. Strain carefully through a double muslin.
  10. Remove all fat using both sides of 8 cm (3 in) square pieces of kitchen paper.
  11. Correct the seasoning and color , which should be a delicate amber.
  12. Degrease again, if necessary.
  13. Bring to the boil.
  14. Serve n a warm soup tureen.
Consomme are varied in many ways by altering the stock, egg,, chicken, chicken and beef, etc.Also by the addition of numerous garnishes. Certain consomme are also severed cold and are popular in very hot weather for luncheon, dinner or supper.
soup ေတြ ထဲမွာ ကြန္စိုမီ consomme ကို သိထားသင္႕ပါတယ္။ အေနာက္တုိင္း အစားအစာ ၿဖစ္ၿပီ chinese မွာ ေတာ႕ chicken noddle soup ဆိုၿပီး ရိွပါတယ္။ Europe မွာေတာ႕ chicken sonsomme, beef consomme နဲ႕ veg consomme ၿပီးရိွပါတယ္။
ပထမဦးဆံုး အ၀က်ဥ္း အိုးတလံုးကို ေရထည္႕ၿပီး တည္ထားပါ။ ပါ၀င္ပစၥည္းေတြ ( carrot , celery, onion, leek, egg white , black pepper, white pepper, salt, beef or chicken ) ေတြကို ေရခဲႏွင္႕ နယ္ပါ။
မီးဖိုေပၚတြင္တည္ထားေသာ ေရေႏြးအိုး ဆူလာလွ်င္ မီးကို ခဏပိတ္လိုက္ပါ။ ေရခဲႏွင္႕ နယ္ထားေသာအရာမ်ားကို ဆူထားေသာေရေႏြးထဲသို႕ ေလာင္းထည္႕ပါ။ ေမႊပါ။ မီး ကို ေအးေအးေလး simmer ထားပါ။ ေရေႏြးၿပန္ဆူလာလွ်င္ မေမႊပါေတာ႕ႏွင္႕။ ၁ နာရီ ၂ နာရီေလာက္ၾကာလွ်င္ ရႏုိင္ပါသည္။ အသားက်က္ၿပင္ၾကီး ေရေအာက္သို႕ က်သြားမွသာ စစ္ယူလွ်င္ပိုေကာင္းသည္ ၊ wanton မုန္႕ထုပ္ေလးမ်ား ကို soup ထဲ ထည္႕ၿပီး serve လုပ္လွ်င္ ပိုလွ ေပလိမ္႕မည္ ဟု ဆရာခိုက ေၿပာပါသည္။ း)
