ေၾသာ္.... GluTen

chef , seafood salad က gluten free ျဖစ္သလား။ room service က ဖားမေလး က လွမ္းေမတာပါ။ ရွင္းရွင္းေျပာရရင္ က်ေနာ္ကလည္း ဒီစကားလံုးကို ခု မွ ၾကားဖူးတာ။  း) ဒါနဲ႕ ျပန္ေမးရတာေပါ႕။ ဘာလဲ လို႕ gluten free ဆိုတာ။ ငါ ၾကားဖူးတာက sugar free ကိုပဲ လို႕။ gluten free က glucose ကလာတဲ႕ စကားလံုးလားလို႕။ ဖားမေလးကလည္း မသိဘူးတဲ႕ ။ က်ေနာ္ကလည္း ညပိုင္းက အၾကီးဆံုး ေမာစ္႕ နဲ႕ မာမီ ရဲ တို႕ကို ေမးတာပဲ။ း) သူ တို႕က လည္း သိဘူးတဲ႕ဗ်ာ။ ေကာင္းေရာ...။
ဖားမေလးက ဧည္႕သည္ကို ျပန္ေျပာဟန္တူပါတယ္။ ဧည္႕သည္က ေတာ္ေတာ္ လာ တယ္ဗ်။ အဲ႕ဒီ chef ေတြ မသိရင္ သူ႕ဆီကို ဖုန္းဆက္ ခိုင္းလိုက္လို႕ ေျပာတယ္ တဲ႕ဗ်ာ ။ ေနာက္  ဆက္ရစ္ေတာ႕တာေပါ႕။ အာလူးေၾကာ္ထဲမွာ ဂ်ဳံ ပါလား တို႕ ၊ ဘယ္ေလာက္ၾကာမွာလဲတို႕ စံုလို႕ စံုလို႕ပါပဲ။  ေနာက္ဆံုးေတာ႕ သူေမးတဲ႕ ဟင္းပြဲေတြ မမွာဘဲ တၿခား ဟင္းပြဲပဲ မွာသြားတယ္။ က်ေနာ္လည္း တႏံုႏံုနဲ႕ေလ။ မနက္ခင္းေရာက္ေတာ႕ မနက္အဆိုင္းက  ဘဂံုး chef ကိုေမးၾကည္႕တယ္။ သူေျပာတာက ဟုတ္တုက္တုက္ဗ်။ မင္း အာဂ်ီႏိုမိုတို AJinomoto ကို မသိဘူးလားတဲ႕ ။ သိတာေပါ႕လိုက က်ေနာ္ကေျပာေတာ႕ gluten ဆိုတာ အဲ႕ဒါကို ေျပာတာတဲ႕ေလ။ က်ေနာ္က ခပ္တည္တည္နဲ႕ အာဂ်ီႏီုမိုတို ကုိ သြားယူတာေပါ႕။ ငွဲငွဲ ။ ဒီမွာ ေရးထားတာက mono sodium glutamate လို႕။ gluten လို႕ ေရးမထားဘူးလို႕ေျပာေတာ႕ သူၾကားဘူးတာက stock ေစ်းမွာတဲ႕ အခါ အာဂ်ီႏိုမိုတိုကို glutamate လို႕ အျပည္႕ မေခၚဘဲ gluten လို႕ပဲ ေခၚတယ္တဲ႕ဗ်ာ။ က်ေနာ္ လည္း ေယာင္၀ါး၀ါး ျဖစ္သြားေရာ။ သူ႕ အေျဖကိုေတာ႕ အျပည္႕အ၀ မေက်နပ္ဘူးေလ။ တစ္ေယာက္ေမး တစ္မ်ဳိးေျပာေနကတည္းက ငါ ထင္တယ္ လို ျဖစ္ေနတယ္ေလ။ ;)

Special Considerations

Removing gluten from the diet is not easy.  Grains are used in the preparation of many foods.  It is often hard to tell by a food's name what may be in it, so it is easy to eat gluten without even knowing it.  However, staying on a strict gluten-free diet can dramatically improve the patient's condition.  Since it is necessary to remain on the gluten-free diet throughout life, it will be helpful to review it with a registered dietitian.
The person who prepares the patient's food much fully understand the gluten-free diet.  Read food labels carefully:
  • Do not eat anything that contains the following grains: wheat, rye and barley.
  • At one time, oats were thought to contain some gluten.  It has now become apparent, however, that oats frequently were processed in machines that also processed wheat.  Most manufacturers no longer do this, although if there are any questions, a person should get reassurance from the manufacturer by mail, email or phone.
  • The following can be eaten in any amount: corn, potato, rice, soybeans, tapioca, arrowroot, carob, buckwheat, millet, amaranth and quinoa.
  • Distilled white vinegar does not contain gluten.
  • Malt vinegar does contain gluten.
Grains are used in the processing of many ingredients, so it will be necessary to seek out hidden gluten.  The following terms found in food labels may mean that there is gluten in the product.
  • Hydrolyzed Vegetable Protein (HVP), unless made from soy or corn
  • Flour or Cereal products, unless made with pure rice flour, corn flour, potato flour or soy flour
  • Vegetable Protein, unless made from soy or corn
  • Malt or Malt Flavoring, unless derived from corn
  • Modified Starch or Modified Food Starch, unless arrowroot, corn, potato, tapioca, waxy maize or maize is used
  • Vegetable Gum, unless made from carob bean, locust bean, cellulose, guar, gum arabic, gum aracia, gum tragacanth, xantham or vegetable starch
  • Soy Sauce or Soy Sauce Solids, unless you know they do not contain wheat
Any of the following words on food labels often mean that a grain containing gluten has been used.
  • Stabilizer
  • Starch
  • Flavoring
  • Emulsifier
  • Hydrolyzed
  • Plant Protein
